Warning: Don't Make These If You're Dieting!


It is nearly impossible to eat just one square of these delicious, delectable creations. So when the kids want them, I make them with eggs and butter so that I CAN'T eat them! Yes, they are THAT GOOD!


Oat or Quinoa Chocolate Chip Lunchbox Bars

1 ½ cups firmly packed brown sugar

1 cup shortening (or butter or Earth Balance)

2 Tb. molasses (I use unsulfured)

2 tsp. gf vanilla

2 eggs or egg replacer

1 cup all purpose flour or GF flour mix (See previous post for recipe) (You can also use traditional all purpose flour)

1 tsp. baking soda

1 tsp. salt

3 cups oats or quinoa flakes

½ to 1 cup chocolate chips (or raisins or dried cranberries)

Pre-heat oven to 350. Cream together brown sugar and shortening. Add eggs or replacer, molasses and vanilla. Blend well with a mixer. Add all dry ingredients except for oats/quinoa and chips. Blend well. Blend in quinoa. Stir in chips. *If batter is dry, add a little milk or liquid.
Spread in greased 9x13 pan. Bake for 25 to 30 minutes until edges are brown and center is set. Cool for at least 20 minutes before cutting into bars
