That's How the Cookie Crumbles...


A quick post today for the chocoholics!

Toll House-Like Chocolate Chip Cookies

2 1/4 cups GF flour mix (see sidebar at top of my blog page)

1 tsp baking soda

1 tsp salt

1 cup Earth Balance soy free or Earth Balance original (or butter if you can partake)

2/3 cup sugar

3/4 cup packed brown sugar

1 tsp vanilla extract (Kirkland is safe)

2 large eggs /or/ use Ener-g egg replacer /or/ 3 Tb plain applesauce

1 cup Enjoy Life chocolate chips (if you can have soy, Ghirardelli and Guittard are ok to use)

Cream together Earth Balance, sugars, vanilla, and eggs. Blend well. Add all dry ingredients except for the chips. At this point, if your dough is still dry, add a bit of almond milk to give it that cookie dough consistency.

Scoop by rounded spoonfulls onto ungreased stone or cookie sheet. Bake at 375 for 10-12 minutes. To prevent breakage, cool on sheet for about 7 minutes before transferring to wire cooling rack.

And then order either the Insanity Workout or The Shred - because you are going to want to eat a lot of these cookies!
