If you haven't tried the wonderful thing called Almond Meal, you are missing out!
It is not only glycemic friendly but allergy friendly as well.
It is super versatile. I have used it in cookies, corn bread, raw food, and now
Tonight I tried this recipe and it is phenomenal! I did cut the recipe in half for a personal pizza.
So here we go:
Almond Meal Pizza Crust
2 cups ground almond meal/flour
3 eggs (Or use flax meal. It is amazing! 1 Tb + 1 Tb water per egg)1 T olive oil
½ tsp salt
1 tsp xanthan gum
Herbs/seasonings if desired
Mix together. Press onto a baking stone that has been oiled slightly.
Bake in preheated 400 oven for 8 minutes or until top feels dry. Add toppings. I used olive oil and garlic, fresh veggies and Daiya cheese. Bake another 10 minutes at 400 or until your crust is completely dry and cheese is melted.
