Yummy Tiny Bites

Have a hankerin' for a dessert but not a lot of time?

Wanting to give the kids a quick, fun treat?

Well, check it out!

To make these cute, little things, you just need:

One box of Enjoy Life cookies (these are Double Chocolate Brownie).


To make your frosting, find your favorite buttercream frosting recipe and simply substitute the butter with Earth Balance spread and the cow's milk with almond milk. A typical recipe will look something like this:

2/3 cup Earth Balance
4 cups powdered sugar
2 Tb or more of almond milk
1/4 tsp vanilla

Blend powdered sugar slowly into Earth Balance. Add milk and vanilla. If frosting is runny, add more powdered sugar. If it is too dry, add more milk. Simple!

Now all you have to do to make cute, little cookie snacks is spread that frosting on one cookie and smash another right on top of it.

And eat it with your pinkie up along with a cup of coffee.

By the way, I think these would be especially tasty if one used Coconut Bliss in place of the frosting!
